Salmon Patties

  • 1 (14.75-ounce) can salmon (drained, bones and skin removed)
  • 1/2 cup breadcrumbs (plain or seasoned)
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped parsley
  • 1 large egg
  • 2 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

  • 2 tablespoons olive oil (for frying)
  • Lemon wedges for serving

Instructions

  1. Prepare the mixture: In a large mixing bowl, combine the drained salmon, breadcrumbs, finely chopped onion, parsley, egg, mayonnaise, Dijon mustard, garlic powder, salt, and black pepper. Mix gently until just combined to maintain a good texture without overworking the mixture.
  2. Form patties: Shape the mixture into 6 equal-sized patties, pressing firmly to hold their shape but not too dense.
  3. Heat the oil: Heat the olive oil in a large skillet over medium heat to ensure even cooking and a crispy exterior.
  4. Cook the patties: Add the salmon patties carefully to the hot skillet. Cook for 3 to 4 minutes per side, or until they are golden brown and heated through.
  5. Remove and drain: Once cooked, transfer the patties to a paper towel-lined plate to absorb any excess oil.
