Chicken:

  • 2 garlic cloves, minced
  • 2 cups ripe plums, pitted and chopped
  • 1/4 cup low-sodium chicken broth
  • 2 tablespoons balsamic vinegar
  • 2 tablespoons honey
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • Chopped fresh parsley or green onion for garnish

Instructions

  1. Season the chicken: Season the chicken with salt and black pepper.
  2. Sear the chicken: In a large skillet over medium-high heat, heat olive oil and butter. Add the chicken and sear for 4–5 minutes per side until golden brown and cooked through. Transfer to a plate and keep warm.
  3. Prepare the sauce: In the same skillet, add the sliced red onion and sauté until softened. Add the garlic and cook briefly. Stir in plums, chicken broth, balsamic vinegar, honey, ginger, and red pepper flakes. Simmer for 8–10 minutes until the sauce thickens.
  4. Combine and simmer: Return the chicken to the skillet, spoon the sauce over the top, and simmer for another 2–3 minutes to coat the chicken in the sauce.
