Instructions

  1. Cook the sausage: Heat a large oven-safe skillet over medium heat. Add the sausage, breaking it apart with a spoon, and cook until browned and cooked through. Transfer the cooked sausage to a plate and set aside.
  2. Sauté the potatoes: In the same skillet, add olive oil and diced potatoes. Cook for 8 to 10 minutes, stirring occasionally, until the potatoes begin to soften and lightly brown.
  3. Add vegetables: Add the diced onion and red bell pepper to the skillet and cook for another 5 minutes until the vegetables are tender.
  4. Season the hash: Stir in the minced garlic, dried oregano, smoked paprika, salt, and black pepper. Cook for 1 minute until fragrant.
  5. Combine sausage and vegetables: Return the cooked sausage to the skillet and stir to combine evenly with the vegetables and potatoes.
  6. Cook eggs: Reduce heat to medium-low. Create four small wells in the hash and crack one egg into each well. Cover the skillet and cook for 5 to 7 minutes, or until the egg whites are set and yolks reach your preferred doneness.
  7. Finish and serve: Remove the skillet from heat. Evenly sprinkle the hash with crumbled feta cheese and chopped fresh parsley before serving.
