Zucchini:
- 4 medium zucchini
Other:
- 1 tablespoon olive oil
- 1/2 pound Italian sausage (mild or spicy, casings removed)
- 1/2 cup diced onion
- 1 garlic clove (minced)
- 1/2 cup diced red bell pepper
- 1 cup marinara sauce
- 1/2 teaspoon Italian seasoning
- Salt and pepper to taste
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- Fresh parsley for garnish (optional)
Instructions
- Preheat the oven: Preheat the oven to 375°F (190°C).
- Prepare zucchini: Slice each zucchini in half lengthwise, scoop out the center leaving 1/4 inch flesh. Place in a baking dish, season with salt and pepper.
- Cook sausage mixture: Brown sausage in olive oil, add onion, garlic, bell pepper, sauté. Stir in marinara sauce and Italian seasoning, simmer.
- Fill zucchini boats: Spoon sausage mixture into zucchini boats. Top with cheeses.
- Bake: Cover with foil, bake for 25 minutes, then uncover and bake for an additional 5–10 minutes until tender and cheese is melted.
- Serve: Garnish with parsley and serve warm.
