Ingredients
Crust:
2 refrigerated pie crusts (or homemade)
Filling:
1 tablespoon olive oil, 1/2 small onion (finely chopped), 1 clove garlic (minced), 1/2 pound ground beef or ground turkey, 1/2 teaspoon salt, 1/4 teaspoon black pepper, 1/2 teaspoon smoked paprika, 1/4 teaspoon dried thyme, 1/4 cup tomato paste, 1/4 cup beef or chicken broth, 1/3 cup shredded cheddar or mozzarella cheese, 1 egg (beaten, for egg wash)
Instructions
- Preheat oven: Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Sauté onion and garlic: Heat olive oil in a skillet over medium heat. Sauté onion and garlic until softened.
- Cook the meat: Add ground meat, salt, pepper, paprika, and thyme. Cook until browned.
- Add tomato paste and broth: Stir in tomato paste and broth, simmer until thickened.
- Prepare the filling: Let the filling cool slightly, then stir in shredded cheese.
- Assemble the hand pies: Cut pie crusts into circles. Place filling in each round. Fold over, crimp edges, brush with egg wash.
- Bake: Place on baking sheet, vent the pies, and bake for 20–25 minutes until golden brown.
- Cool and serve: Let cool slightly before serving.

- These hand pies can be made ahead and frozen before baking.
