Instructions
- Heat the Fat: Heat 1 tablespoon of bacon grease or neutral oil in a large skillet or dutch oven over medium heat.
- Sauté Vegetables: Add the diced onion, green bell pepper, and celery to the skillet. Cook while stirring frequently until the onions turn translucent, about 3 minutes. Add the minced garlic and cook for another minute until fragrant but not burnt.
- Cook the Meat: Add the ground beef and sausage to the skillet. Season lightly with the Creole seasoning. Increase heat to medium-high and cook, stirring often and breaking up the meat with a wooden spoon, until the meat just begins to brown, about 8 minutes. Drain excess fat if desired.
- Toast the Rice and Simmer: Stir the uncooked parboiled rice into the meat mixture, cooking and stirring frequently to toast the rice in the rendered fat for about 5 minutes. Slowly pour in the beef broth. Season with salt and pepper to taste. Bring the mixture to a boil, then reduce heat to low, cover tightly, and simmer for 20 to 25 minutes, stirring occasionally, until the rice is tender.
- Adjust Seasonings and Serve: Taste and add more Creole seasoning, salt, or pepper as needed. Garnish with thinly sliced green onions before serving.
