- Salt for boiling water
For the Lemon Garlic Sauce:
- 3 tablespoons unsalted butter (divided)
- 4 garlic cloves (minced)
- 1 teaspoon red pepper flakes (optional)
- 1 cup chicken or vegetable broth
- 1/2 cup dry white wine (or additional broth)
- 1 lemon (zested and juiced)
- 1/2 cup grated Parmesan cheese
- 2 tablespoons fresh parsley (chopped)
Instructions
- Cook Orzo: Cook orzo in a large pot of salted boiling water until al dente, then drain and set aside.
- Cook Shrimp: In a large skillet, heat olive oil and 1 tablespoon butter. Season shrimp with salt and pepper, then cook until pink and opaque. Transfer shrimp to a plate.
- Make Sauce: Melt remaining butter in the skillet, add garlic and red pepper flakes, then deglaze with white wine and broth. Stir in lemon juice, zest, and Parmesan cheese until sauce thickens.
- Combine: Add cooked orzo to the sauce and toss to coat. Return shrimp to the pan, sprinkle with parsley, and serve.
