Shrimp and Sauce

  • 1 pound large shrimp, peeled and deveined (tails on or off)
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 3 garlic cloves, minced
  • ½ teaspoon crushed red pepper flakes (optional)
  • 1 (14-ounce) can diced tomatoes
  • 2 tablespoons tomato paste
  • ½ teaspoon dried oregano
  • Salt and black pepper to taste

  • 1 tablespoon fresh dill (optional)
  • Juice of ½ lemon


Instructions

  1. Sauté Onions: Heat olive oil in a large skillet over medium heat. Add the finely chopped onion and cook until soft and translucent, about 3–4 minutes.
  2. Add Garlic and Red Pepper Flakes: Stir in the minced garlic and crushed red pepper flakes; cook for another 30 seconds until fragrant.
  3. Prepare Tomato Sauce: Add the diced tomatoes with their juices, tomato paste, dried oregano, salt, and black pepper. Simmer for 8–10 minutes, stirring occasionally until the sauce thickens slightly.
  4. Cook Shrimp: Arrange the shrimp in a single layer in the skillet. Cook for 2–3 minutes per side, or until the shrimp turn pink and are just cooked through.
  5. Add Feta Cheese: Gently stir in half of the crumbled feta cheese and then remove the skillet from heat.
  6. Garnish and Serve: Top the dish with the remaining feta cheese, chopped fresh parsley, fresh dill if using, and squeeze the juice of half a lemon over the top. Serve hot with crusty bread or over rice.
