Shrimp Saganaki:
- 1 ½ pounds large shrimp, peeled and deveined with tails on
- 2 tablespoons olive oil
- 1 small yellow onion, finely chopped
- 3 garlic cloves, minced
- 1 can (14.5 ounces) crushed tomatoes
- ¼ cup dry white wine
- ½ teaspoon red pepper flakes (optional)
- 1 teaspoon dried oregano
- Salt and black pepper to taste
- ½ cup crumbled feta cheese
- 2 tablespoons fresh parsley, chopped
- Lemon wedges for serving
Instructions
- Heat olive oil: In a large skillet over medium heat, add olive oil.
- Sauté onion and garlic: Add chopped onion and sauté until soft. Stir in garlic and cook briefly.
- Add wine and tomatoes: Pour in white wine, then add crushed tomatoes, oregano, red pepper flakes, salt, and pepper. Simmer the sauce.
- Cook shrimp: Stir in shrimp and cook until pink and opaque. Sprinkle with feta and cook until slightly melted.
- Finish and serve: Garnish with parsley and serve warm with lemon wedges.
Notes
- Shrimp Saganaki is delicious served with crusty bread, over rice, or alongside orzo.
- For a richer flavor, use a splash of ouzo instead of white wine.
