Instructions

  1. Add the Ingredients: Combine chicken, carrots, celery, onion, garlic, potatoes, diced tomatoes, chicken broth, tomato paste, thyme, rosemary, paprika, salt, and pepper in the slow cooker.
  2. Cook: Cover and cook on low for 7 to 8 hours or on high for 4 to 5 hours until vegetables are tender and chicken is cooked through.
  3. Add Peas: In the last 30 minutes, stir in frozen peas.
  4. Thicken (Optional): For a thicker stew, mix cornstarch and water, then stir into the stew and cook uncovered for 20–30 minutes.
