- 4 boneless, skinless chicken breasts (or thighs)
- 1 can (15 oz) diced tomatoes (with juice)
- 1/2 cup kalamata olives (pitted and halved)
- 1/4 cup sun-dried tomatoes (chopped)
- 1 small red onion (sliced)
- 3 cloves garlic (minced)
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon crushed red pepper flakes (optional)
- Salt and black pepper to taste
- 2 tablespoons olive oil
- Juice of 1 lemon
- 1/4 cup crumbled feta cheese (for garnish)
- 2 tablespoons chopped fresh parsley (for garnish)
Instructions
- Place the chicken in the slow cooker: Arrange chicken in the bottom of the slow cooker.
- Add ingredients: Add diced tomatoes, olives, sun-dried tomatoes, red onion, and garlic. Season with oregano, basil, paprika, red pepper, salt, and pepper.
- Drizzle olive oil and lemon juice: Drizzle over the top.
- Cook: Cover and cook on low for 6-7 hours or high for 3-4 hours.
- Adjust seasoning and serve: Garnish with feta and parsley before serving.
