  • 4 boneless, skinless chicken breasts (or thighs)
  • 1 can (15 oz) diced tomatoes (with juice)
  • 1/2 cup kalamata olives (pitted and halved)
  • 1/4 cup sun-dried tomatoes (chopped)
  • 1 small red onion (sliced)
  • 3 cloves garlic (minced)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • Juice of 1 lemon
  • 1/4 cup crumbled feta cheese (for garnish)
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

  1. Place the chicken in the slow cooker: Arrange chicken in the bottom of the slow cooker.
  2. Add ingredients: Add diced tomatoes, olives, sun-dried tomatoes, red onion, and garlic. Season with oregano, basil, paprika, red pepper, salt, and pepper.
  3. Drizzle olive oil and lemon juice: Drizzle over the top.
  4. Cook: Cover and cook on low for 6-7 hours or high for 3-4 hours.
  5. Adjust seasoning and serve: Garnish with feta and parsley before serving.

  • You can use boneless chicken thighs for a more tender result.
