Description

This Snickerdoodle Cobbler is a warm, comforting dessert combining the beloved cinnamon-sugar flavors of a classic snickerdoodle cookie with a soft, gooey cobbler texture. With layers of melted butter, cinnamon-spiced batter, and a sweet brown sugar topping that bakes to a golden perfection, this cobbler is an easy-to-make treat perfect for family gatherings or cozy nights in.

Ingredients

Scale

Wet Ingredients

  • 1/3 cup unsalted butter, melted
  • 3/4 cup whole milk
  • 2 teaspoons vanilla extract
  • 1 1/2 cups hot water

Dry Ingredients

  • 1 1/2 cups sugar
  • 1 1/2 cups flour
  • 2 1/4 teaspoons baking powder
  • 3/4 teaspoon salt
  • 2 teaspoons cinnamon
  • 1 1/2 cups brown sugar, packed
  • 1/4 cup sugar
  • 1/2 teaspoon cinnamon

Instructions

  1. Preheat & Prepare Pan: Preheat your oven to 350°F (175°C). Pour the melted butter evenly into a 9×13-inch baking pan, ensuring the bottom is completely coated for a rich base.
  2. Mix Wet Ingredients: In a large bowl, whisk together the whole milk, vanilla extract, and 1 1/2 cups sugar until the mixture is smooth and combined.
  3. Add Dry Ingredients: Stir the flour, baking powder, salt, and 2 teaspoons cinnamon into the wet ingredients just until everything is combined, being careful not to overmix.
  4. Layer Batter: Spoon the batter evenly over the melted butter layer in the baking pan without stirring, allowing the butter to remain at the bottom.
  5. Add Brown Sugar: Sprinkle the packed brown sugar evenly over the top of the batter layer to create a rich, caramelized topping during baking.
  6. Pour Hot Water: Gently pour the 1 1/2 cups of hot water over the brown sugar and batter without stirring. This will create the gooey cobbler texture as it bakes.
  7. Bake: Place the pan in the oven and bake for 30 to 35 minutes, or until the top is golden brown and mostly set with bubbly edges.
  8. Finish with Topping: Mix the remaining 1/4 cup sugar and 1/2 teaspoon cinnamon and sprinkle this mixture over the hot cobbler immediately after removing it from the oven for a final, sweet cinnamon crunch.
  9. Cool & Serve: Allow the cobbler to cool slightly before serving warm. It pairs wonderfully with vanilla ice cream or whipped cream if desired.

Notes

  • Do not stir the batter once layered over the melted butter — the layering creates a distinct, delicious cobbler texture.
  • Use hot water to help dissolve the brown sugar and create that gooey, syrupy bottom layer.
  • Letting the cobbler cool slightly helps it set and makes it easier to serve.
  • For an extra touch, serve with vanilla ice cream or a dollop of whipped cream.
  • Store leftovers covered in the refrigerator and reheat gently before serving.
