Description

Snow Globe Cheesecake Bites are delightful, festive treats perfect for holiday gatherings. A buttery cookie crust topped with a creamy cheesecake filling, decorated with adorable fondant snowmen and a clear gelatin ‘snow globe’ finish, these bites combine charming presentation with rich flavors for a magical dessert experience.

Ingredients

Scale

Crust

  • 1/2 cup Butter (Can substitute with margarine for a dairy-free option.)
  • 1/2 cup Sugar (Brown sugar can add a deeper flavor.)
  • 1 1/2 cups All-purpose flour (Gluten-free flour can be used.)
  • 1 large Egg (A flax egg can be used for a vegan option.)

Cheesecake Filling

  • 8 oz Cream cheese (Neufchâtel cheese can be a lower-fat alternative.)
  • 1/2 cup Sour cream (Can substitute with Greek yogurt for a healthier option.)
  • 1/2 cup Sugar (Consider using powdered sugar for a smoother texture.)
  • 1 teaspoon Vanilla extract (Almond extract can provide a different flavor profile.)

Decorative Topping

  • 1 packet Clear gelatin (Agar-agar can be used for a vegetarian version.)
  • 1 cup Fondant (Store-bought or homemade fondant can be used.)
  • 1 tablespoon Edible glitter (Optional, can be omitted for simplicity.)

Instructions

  1. Prepare the crust: Cream together ½ cup of softened butter and ½ cup of sugar until light and fluffy. Gradually mix in 1½ cups of all-purpose flour and 1 egg until well combined. Press the mixture into a greased baking dish evenly to form the crust base.
  2. Pre-bake the crust: Place the baking dish in a preheated oven at 350°F and bake for 10 minutes, or until the crust is just set and lightly golden. Remove from oven and allow to cool completely.
  3. Make the cheesecake filling: In a large bowl, beat 8 oz of room-temperature cream cheese until smooth and creamy. Add ½ cup of sour cream, ½ cup sugar, and 1 teaspoon vanilla extract. Mix well until all ingredients are fully incorporated and the mixture is smooth.
  4. Add filling to crust and chill: Pour the cheesecake filling over the cooled crust, spreading it evenly. Cover the baking dish with plastic wrap or foil and refrigerate for 3-4 hours until the filling is firm and set.
  5. Prepare the gelatin and decorations: Prepare the clear gelatin according to package instructions and let it cool slightly to avoid melting the fondant decorations. Arrange fondant snowmen on top of the chilled cheesecake filling.
  6. Apply gelatin over decorations: Gently pour the cooled clear gelatin over the fondant figures and cheesecake to encase them, creating the ‘snow globe’ effect. Refrigerate again for about 1 hour or until the gelatin is fully set.
  7. Serve: Once gelatin is firm, cut the cheesecake into bite-sized squares. Carefully arrange the decorated snowmen topped squares on a serving platter and sprinkle with edible glitter for a magical finish. Serve chilled.

Notes

  • For a dairy-free option, substitute butter with margarine, cream cheese with dairy-free cream cheese, and sour cream with a plant-based alternative.
  • Brown sugar can be used in the crust for a richer flavor.
  • Gluten-free all-purpose flour can replace regular flour to make the recipe gluten-free.
  • Use powdered sugar in the filling for a smoother texture if preferred.
  • Flax egg works as a vegan substitute for the chicken egg in the crust.
  • Agar-agar can be used in place of gelatin for vegetarian or vegan versions but will affect texture slightly.
  • Store the cheesecake bites chilled and consume within 3 days for best freshness.
