  • 1 (12 oz) can Spam, sliced into 1/4-inch thick pieces
  • 2 tablespoons soy sauce
  • 1 tablespoon sugar (for caramelizing)
  • 2 tablespoons water (for caramelizing)

Egg Omelet

  • 6 large eggs

Assembly

  • 3 sheets nori, cut into 2-inch wide strips


Instructions

  1. Prepare the Rice: Rinse the sushi rice under cold water until the water runs clear to remove excess starch. Cook the rice with 2 cups of water according to your rice cooker or stovetop instructions. Once cooked, mix rice vinegar, sugar, and salt in a small bowl until dissolved, then gently fold this seasoning into the rice. Set aside to cool slightly.
  2. Cook the Spam: Slice the Spam into 1/4-inch thick slices. Heat a skillet over medium heat and fry the Spam slices until browned on each side, about 2-3 minutes per side.
  3. Caramelize the Spam: In the same skillet, add soy sauce, 1 tablespoon sugar, and 2 tablespoons water. Continue cooking the Spam slices, spooning the caramel sauce over them, until the slices are well coated and the sauce thickens, about 3-4 minutes. Remove from heat.
  4. Make the Omelet: Whisk the eggs thoroughly. Grease the skillet lightly and pour in enough egg mixture to form a thin layer. Cook until the egg is set, then roll the omelet gently using a spatula. Continue adding egg mixture in layers and rolling until all eggs are cooked. Cut the rolled omelet into strips that will fit on the musubi.
  5. Assemble the Musubi: Using a musubi mold or your hands, pack a portion of the sushi rice into the mold. Layer a slice of rolled omelet and a piece of caramelized Spam on top of the rice. Press gently to secure, then wrap the musubi tightly with a strip of nori, sealing the ends as needed.
  6. Serve: Repeat the process for the remaining ingredients. Serve the Spam Musubi with Egg warm or at room temperature as a savory breakfast or snack.
