For the bisque:

  • 1/4 cup dry white wine
  • 2 tablespoons tomato paste
  • 3 cups seafood stock
  • 1/2 cup heavy cream
  • 1/2 cup cooked seafood (shrimp, crab, or lobster meat)
  • Salt and pepper to taste

For the sesame prawn croutons:

  • 6 large raw prawns (peeled and deveined)
  • 2 slices baguette (cut into small rounds)
  • 1 teaspoon sesame oil
  • 1/2 teaspoon soy sauce
  • 1/2 teaspoon grated fresh ginger
  • 1/2 teaspoon cornstarch
  • 1 tablespoon sesame seeds
  • 1 tablespoon neutral oil (for frying)

Instructions

  1. Make the bisque: In a medium saucepan, heat olive oil and butter over medium heat. Add chopped onion and cook until soft, about 5 minutes. Stir in garlic, cumin, paprika, cayenne, and coriander. Cook for 1 minute until fragrant. Add white wine and simmer until reduced by half. Stir in tomato paste, then add seafood stock. Simmer for 10–12 minutes. Add cream and seafood, then simmer another 5 minutes. Blend the soup using an immersion blender until smooth (optional for a creamier texture). Season with salt and pepper to taste. Keep warm.
  2. Make the prawn croutons: Finely mince the raw prawns and mix in a bowl with sesame oil, soy sauce, ginger, and cornstarch to form a rough paste. Spread the prawn mixture on baguette rounds and press sesame seeds on top. In a skillet, heat neutral oil over medium-high heat. Fry croutons prawn-side down for 2–3 minutes until golden, then flip and toast the bread side. Remove and drain on paper towels.
  3. Serve the bisque hot in bowls, topped with sesame prawn croutons. Garnish with a drizzle of cream or chopped herbs if desired.
