Potato Fries:

  • 2 large russet potatoes, cut into thin fries
  • 2 tablespoons vegetable oil
  • Salt to taste

Sesame Garlic Sauce:

  • 1 tablespoon sesame oil
  • 4 cloves garlic, minced
  • 1 teaspoon crushed red pepper flakes
  • 1 tablespoon soy sauce
  • 1 teaspoon rice vinegar
  • 1 tablespoon sesame seeds
  • Chopped green onions for garnish

Instructions

  1. Preheat the oven: Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Prepare the potatoes: Toss the cut potatoes with vegetable oil and salt. Spread on the baking sheet and roast for 25–30 minutes until crispy, flipping halfway through.
  3. Make the sesame garlic sauce: Heat sesame oil in a skillet, sauté garlic and red pepper flakes. Add soy sauce and rice vinegar, then remove from heat.
  4. Finish the fries: Transfer baked fries to a bowl, drizzle with the garlic-chili-soy mixture, toss to coat. Sprinkle with sesame seeds and green onions.
