  • 1 teaspoon fresh ginger (grated)
  • 1 red bell pepper (diced)
  • 2 eggs (beaten)
  • 3 cups cooked and chilled jasmine rice
  • 1/2 teaspoon crushed red pepper flakes (adjust to taste)
  • 2 tablespoons sriracha or chili garlic sauce
  • 1/2 cup frozen peas
  • 2 green onions (sliced)
  • Salt and pepper to taste
  • Lime wedges for serving (optional)

Instructions

  1. Marinate the shrimp: Toss the shrimp with 1 tablespoon soy sauce and set aside for 10 minutes.
  2. Cook the shrimp: Heat oils in a skillet, cook shrimp until pink, then set aside.
  3. Sauté vegetables: Cook onion, bell pepper, garlic, and ginger until softened.
  4. Scramble eggs: Push vegetables aside, add eggs, scramble, and mix everything.
  5. Add rice and seasonings: Stir in rice, soy sauce, red pepper flakes, sriracha, and peas. Heat through.
