Shrimp Filling:

  • 2 cups cooked sushi rice, cooled
  • 1 avocado, diced
  • 1/2 cup cucumber, diced
  • 2 green onions, sliced
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sugar
  • toasted sesame seeds
  • nori sheets, sliced into strips (optional)

Instructions

  1. Prepare Spicy Mayo: In a small bowl, combine mayonnaise, sriracha sauce, and sesame oil. Set aside.
  2. Make Shrimp Filling: Mix chopped shrimp with half of the spicy mayo in a bowl.
  3. Season Cucumber: Toss diced cucumber with rice vinegar, soy sauce, and sugar in a separate bowl.
  4. Assemble Stacks: Layer a ring mold with sushi rice, then add spicy shrimp, avocado, and marinated cucumber. Press gently and remove the mold.
  5. Garnish and Serve: Top with green onions, sesame seeds, and nori strips if desired. Serve with soy sauce and pickled ginger.
