Description

These Spinach Puffs are delightful puff pastry appetizers filled with a savory mixture of spinach, feta, and Parmesan cheese. Perfect for parties or as a tasty snack!

Puff Pastry:

  • 1 sheet puff pastry, thawed

Filling:

  • 1 tablespoon olive oil
  • 1/2 small onion, finely chopped
  • 2 cloves garlic, minced
  • 5 oz fresh spinach, chopped (or 1/2 package frozen spinach, thawed and drained)
  • 1/2 cup crumbled feta cheese
  • 1/4 cup grated Parmesan cheese
  • 1 egg, beaten (plus 1 egg for egg wash)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • pinch of nutmeg (optional)

Instructions

  1. Preheat the oven: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Sauté onion and garlic: In a skillet, heat olive oil over medium heat. Add onion and sauté until soft, about 3 minutes. Stir in garlic and cook for 30 seconds more.
  3. Cook spinach: Add chopped spinach and cook until wilted (or heated through if using frozen), about 2–3 minutes. Remove from heat and let cool slightly.
  4. Prepare filling: In a bowl, combine the spinach mixture with feta, Parmesan, one beaten egg, salt, pepper, and nutmeg. Stir until fully mixed.
  5. Assemble puffs: Roll out the puff pastry on a lightly floured surface and cut into 9 equal squares. Spoon about 1 tablespoon of filling into the center of each square. Fold corners together to create a triangle or bundle, and pinch to seal.
  6. Bake: Place on the prepared baking sheet, brush with egg wash, and bake for 18–20 minutes or until golden and puffed.
  7. Serve: Serve warm and enjoy!

Notes

  • You can prep these ahead and freeze before baking—just bake straight from frozen, adding 5 extra minutes.
