Instructions
- Heat the Olive Oil: Heat olive oil in a large pot over medium heat.
- Cook Onion and Garlic: Add chopped onion and cook until softened, then stir in minced garlic and cook until fragrant.
- Add Peas and Broth: Add peas and vegetable broth. Bring to a boil, then simmer until peas are tender.
- Blend: Remove from heat, stir in mint leaves, and puree the soup with an immersion blender or in batches in a blender until smooth.
