Ingredients
Scale
Sweet Potatoes
- 2 pounds sweet potatoes, peeled and cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Tahini Butter Sauce
- 3 tablespoons unsalted butter, melted
- 3 tablespoons tahini
- 2 tablespoons honey or maple syrup
- 1 tablespoon lemon juice
- 2 cloves garlic, finely minced
Optional Garnish
- Sesame seeds
- Chopped fresh parsley
Instructions
- Preheat Oven: Preheat your oven to 425°F (220°C) to get it ready for roasting the sweet potatoes evenly.
- Prepare Sweet Potatoes: Place the sweet potato cubes on a large baking sheet. Drizzle with olive oil and sprinkle with salt and black pepper. Toss thoroughly to coat all pieces evenly.
- Roast First Side: Spread the sweet potatoes out in a single layer to ensure even roasting. Put the baking sheet in the oven and roast for 25 minutes.
- Flip Sweet Potatoes: Remove the baking sheet and carefully flip the sweet potatoes to ensure even caramelization on all sides.
- Mix Tahini Butter Sauce: While the potatoes roast, whisk together the melted butter, tahini, honey or maple syrup, lemon juice, and minced garlic in a small bowl until smooth and creamy.
- Apply Sauce and Continue Roasting: Drizzle half of the tahini butter sauce over the flipped sweet potatoes and gently toss to coat. Return the pan to the oven and roast for an additional 15 to 20 minutes until the sweet potatoes are tender, caramelized, and sticky.
- Finish and Serve: Remove the sweet potatoes from the oven and drizzle the remaining tahini butter sauce on top. Transfer to a serving dish and optionally garnish with sesame seeds and chopped fresh parsley. Serve warm.
