Description

This strawberry cobbler is a delightful and easy-to-make dessert that features fresh strawberries topped with a sweet buttery crust. Baked to golden perfection, it pairs wonderfully with vanilla ice cream or whipped cream for a comforting and crowd-pleasing treat, perfect for any occasion.

Ingredients

Scale

Fruit Layer

  • 3 cups sliced strawberries (fresh recommended, not frozen)
  • 2 Tablespoons granulated sugar

Batter/Topping

  • 1 cup granulated sugar
  • 1/2 cup butter (softened)
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • pinch of salt
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat and prepare baking dish: Preheat your oven to 350 degrees Fahrenheit. Grease a 2-quart baking dish with non-stick spray to prevent sticking and make cleanup easier. Spread the sliced strawberries evenly in a single layer inside the prepared dish, then sprinkle the strawberries with 2 tablespoons of sugar to sweeten and macerate them slightly while baking.
  2. Make the batter: In a medium bowl, use an electric hand mixer to beat together the softened butter and 1 cup of granulated sugar until well combined and creamy. Add the all-purpose flour, baking powder, and a pinch of salt to the bowl and mix until just incorporated. Next, add the egg and vanilla extract and continue to beat gently until the batter forms a cookie dough-like consistency.
  3. Assemble and bake: Carefully spread the batter over the top of the sugared strawberries in the baking dish using a spatula or your hands, trying to cover most of the fruit as evenly as possible. Bake uncovered in the preheated oven for about 35 minutes or until the crust is golden brown and cooked through. Remove from the oven and let the cobbler stand for 5 to 10 minutes before serving to allow it to set slightly. Serve warm, optionally with vanilla ice cream or whipped cream for extra indulgence.

Notes

  • Use fresh strawberries for the best flavor and texture; frozen strawberries may release too much liquid.
  • Letting the cobbler rest after baking helps the crust firm up and enhances serving consistency.
  • You can add a squeeze of lemon juice to the strawberries if you like a hint of tartness.
  • For a gluten-free option, substitute the all-purpose flour with a gluten-free baking blend.
  • This cobbler is best served warm but can be reheated gently if needed.
