Description

This Strawberry Pop-Tart Pie is a delightful twist on the classic breakfast treat, transformed into a fun, giant pie packed with luscious strawberry filling and topped with a sweet glaze and rainbow sprinkles. Perfect for dessert lovers and nostalgic snack seekers alike, this recipe combines a flaky homemade crust with vibrant flavors and a playful presentation.

Ingredients

Scale

For the Crust

  • 1 ½ cups all-purpose flour
  • ½ cup unsalted butter, cold and cubed
  • 2 tbsp granulated sugar
  • ½ tsp salt
  • 4–5 tbsp ice water

For the Filling

  • 1 ½ cups strawberry jam or preserves
  • 1 tbsp cornstarch (optional, for thicker filling)
  • 1 tsp lemon juice

For the Glaze

  • 1 cup powdered sugar
  • 2–3 tbsp milk
  • ½ tsp vanilla extract
  • Pink or red food coloring (optional)
  • Rainbow sprinkles

Instructions

  1. Make the crust: In a bowl, combine the flour, sugar, and salt. Cut in the cold, cubed butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs. Gradually add ice water one tablespoon at a time, mixing until the dough just comes together. Gather the dough into a disk, wrap it tightly with plastic wrap, and refrigerate for 30 minutes to chill and firm up.
  2. Preheat oven: Set your oven to 375°F (190°C) to prepare for baking the pie.
  3. Prepare filling: In a small bowl, mix the strawberry jam, cornstarch (if using, to thicken the filling), and lemon juice until smooth and well combined.
  4. Roll & fill: On a floured surface, roll out the chilled dough to fit a 9-inch pie pan. Transfer and gently press the dough into the pan, trimming any excess. Pour the strawberry filling evenly over the crust.
  5. Bake: Place the pie in the preheated oven and bake for 35 to 40 minutes or until the crust is golden brown and the filling is bubbling. Remove from oven and let cool completely on a wire rack.
  6. Make glaze: Whisk together the powdered sugar, milk, vanilla extract, and a few drops of pink or red food coloring if desired until the glaze is smooth and pourable. Once the pie is cooled, spread the glaze evenly on top and sprinkle with rainbow sprinkles for a festive touch.
  7. Serve: Slice and enjoy your giant Pop-Tart-inspired Strawberry Pie as a fun dessert or sweet snack!

Notes

  • For a thicker filling, be sure to include the cornstarch in the strawberry mixture.
  • Use cold butter and ice water to ensure a flaky crust texture.
  • Allow the pie to cool completely before glazing to prevent the glaze from melting.
  • Feel free to substitute strawberry jam with other fruit preserves for variation.
  • This pie is best enjoyed the same day but can be stored covered in the refrigerator for up to 2 days.
