For the crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter (melted)
For the filling:
- 4 packages (8 oz each) cream cheese (softened)
- 1 cup granulated sugar
- 1 tsp vanilla extract
- 4 large eggs
- 2/3 cup sour cream
- 2/3 cup heavy cream
For the strawberry swirl:
- 1 cup fresh strawberries (hulled and chopped)
- 2 tbsp granulated sugar
- 1 tsp lemon juice
Instructions
- Preheat oven: Preheat oven to 325°F.
- Prepare crust: Mix graham cracker crumbs, sugar, and melted butter. Press into a springform pan and bake.
- Make strawberry puree: Cook strawberries, sugar, and lemon juice until smooth. Strain and set aside.
- Prepare filling: Beat cream cheese, sugar, and vanilla. Add eggs, sour cream, and heavy cream. Pour over crust.
- Add swirl: Spoon strawberry puree on top of filling and swirl with a knife.
- Bake: Bake for 55–65 minutes until almost set.
- Cool and chill: Let cool in the oven, then refrigerate for at least 4 hours.
- Serve: Top with fresh strawberries before serving.
