  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter (melted)

For the filling:

  • 4 packages (8 oz each) cream cheese (softened)
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 4 large eggs
  • 2/3 cup sour cream
  • 2/3 cup heavy cream

For the strawberry swirl:

  • 1 cup fresh strawberries (hulled and chopped)
  • 2 tbsp granulated sugar
  • 1 tsp lemon juice

Instructions

  1. Preheat oven: Preheat oven to 325°F.
  2. Prepare crust: Mix graham cracker crumbs, sugar, and melted butter. Press into a springform pan and bake.
  3. Make strawberry puree: Cook strawberries, sugar, and lemon juice until smooth. Strain and set aside.
  4. Prepare filling: Beat cream cheese, sugar, and vanilla. Add eggs, sour cream, and heavy cream. Pour over crust.
  5. Add swirl: Spoon strawberry puree on top of filling and swirl with a knife.
  6. Bake: Bake for 55–65 minutes until almost set.
  7. Cool and chill: Let cool in the oven, then refrigerate for at least 4 hours.
  8. Serve: Top with fresh strawberries before serving.
