Scale
Main Ingredients
- 1 tablespoon olive oil
- 1/3 cup white onion, diced
- 1 4oz can mild diced green chiles
- 1/3 cup water
- 1 cup corn (fresh, frozen, or canned; or more if desired)
- 2/3 cup mayonnaise
- 1 cup plain Greek yogurt
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- 1 teaspoon tajin
- 1 lime (juice only)
- 2 tablespoons fresh chopped cilantro (plus extra for garnish)
- 1 cup shredded cheddar cheese
- 1/2 cup shredded cotija cheese or queso fresco (optional)
- Salt and pepper, to taste
- Chips, for serving
Instructions
- Sauté Onion: Heat the olive oil in a skillet over medium heat. Add the diced white onion and cook until softened and translucent, about 3-4 minutes, bringing out sweetness without browning.
- Add Chiles and Corn: Stir in the canned mild diced green chiles and 1/3 cup water to the skillet. Add the corn and cook for another 3-5 minutes until heated through and combined well with the onions and chiles.
- Prepare the Base: In a large mixing bowl, combine the mayonnaise, plain Greek yogurt, chili powder, garlic powder, tajin, and lime juice. Stir well to create a creamy, flavorful base.
- Mix Cooked Vegetables: Add the cooked onion, corn, and chile mixture to the creamy base. Fold in the chopped cilantro and shredded cheddar cheese. Mix until everything is evenly incorporated.
- Optional Cheese: If using, gently fold in shredded cotija cheese or queso fresco for added tangy richness.
- Season: Taste your dip and season with salt and freshly ground black pepper to your preference.
- Garnish and Serve: Transfer the dip to a serving bowl. Garnish with extra chopped cilantro and a sprinkle of tajin if desired. Serve immediately with tortilla chips or chill for 30 minutes to blend flavors before serving.
Notes
- This dip is best enjoyed fresh but can be refrigerated for up to 2 days with a plastic cover.
- Use fresh corn off the cob for the best texture and sweetness; frozen corn should be thawed and drained before use.
- The amount of chili powder and tajin can be adjusted according to your spice preference.
- For a lighter version, reduce the amount of mayonnaise or substitute with more Greek yogurt.
- Adding a dash of smoked paprika can add a smoky depth if you like.
- Serve with your favorite tortilla chips, crackers, or fresh vegetable sticks.
