Description

Delight in these savory stuffed mushrooms, a perfect appetizer combining tender mushroom caps filled with a flavorful mixture of garlic, herbs, cheeses, and breadcrumbs, baked to golden perfection. Ideal for parties or casual get-togethers, these cheesy, herb-infused bites are sure to impress.

Ingredients

Scale

Mushrooms

  • 16 large white or cremini mushrooms (stems removed and finely chopped)

Filling

  • 2 tablespoons olive oil
  • 2 garlic cloves (minced)
  • ¼ cup finely chopped onion
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup breadcrumbs
  • ½ cup grated Parmesan cheese
  • ¼ cup cream cheese (softened)
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh thyme (or 1 teaspoon dried)

Other

  • Cooking spray or extra oil for greasing

Instructions

  1. Preheat and Prepare Baking Sheet: Preheat your oven to 375°F (190°C). Lightly grease a baking sheet or line it with parchment paper to prevent sticking and facilitate easy cleanup.
  2. Clean and Prep Mushrooms: Clean the mushrooms gently and carefully remove the stems, setting the caps aside. Finely chop the stems to create the base of the filling mixture.
  3. Sauté Filling Ingredients: Heat olive oil in a skillet over medium heat. Add the chopped mushroom stems, onion, and minced garlic. Sauté for about 5 minutes until softened and most of the moisture has evaporated. Remove from heat to cool slightly.
  4. Mix Filling: Transfer the sautéed mixture to a bowl. Add breadcrumbs, grated Parmesan cheese, softened cream cheese, chopped parsley, thyme, salt, and black pepper. Stir everything together until well combined and the filling holds together so it can be easily stuffed into mushroom caps.
  5. Stuff Mushroom Caps: Spoon the filling mixture into each mushroom cap, mounding slightly to create a generous topping. Arrange the stuffed mushrooms evenly on the prepared baking sheet.
  6. Bake: Bake in the preheated oven for 20 to 25 minutes or until the tops are golden brown and the mushrooms are tender when pierced with a fork.
  7. Serve: Remove from the oven and serve warm, optionally garnished with extra chopped parsley for a fresh herbal note.

Notes

  • Prepare the filling a day in advance and refrigerate to save time on serving day.
  • For an extra savory flavor, add crumbled cooked bacon or sausage to the filling mixture.
  • Experiment by swapping cream cheese with goat cheese or ricotta for a different creamy texture and taste.
