  • 1 cup uncooked long-grain rice
  • 2 1/2 cups beef or chicken broth
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat the Oven: Preheat the oven to 375°F (190°C).
  2. Cook the Meat and Veggies: Heat olive oil in a large oven-safe skillet. Cook ground beef and onion until browned. Add bell peppers and garlic, cooking for an additional few minutes.
  3. Add Remaining Ingredients: Stir in diced tomatoes, tomato sauce, Italian seasoning, paprika, salt, and pepper. Add rice and broth, then simmer covered for 15 minutes.
