Marinated Chicken:

- 1 tablespoon sesame oil
- 2 cloves garlic, minced

Assembly:
- 2 cups cooked jasmine or short-grain rice
- 1 cup shredded carrots
- 1 cup thinly sliced cucumber
- 1 avocado, sliced
- 2 green onions, sliced
- 1 tablespoon sesame seeds
- Optional: kimchi for serving
Instructions
- Marinate the Chicken: In a medium bowl, whisk together gochujang, soy sauce, rice vinegar, honey, sesame oil, garlic, and ginger. Add the chicken pieces and toss to coat. Marinate for at least 15 minutes (or up to 4 hours in the fridge).
- Cook the Chicken: Heat a large skillet over medium-high heat. Add the marinated chicken and cook for 6–8 minutes, stirring occasionally, until the chicken is browned and cooked through.
- Assemble the Bowls: Divide cooked rice among serving bowls. Top each with shredded carrots, cucumber, avocado slices, and green onions. Add the cooked chicken on top, then sprinkle with sesame seeds. Serve warm with a side of kimchi if desired.
