Rice Noodles:

8 ounces

Sesame Oil:

1 ½ tablespoons (divided)

Chicken:

1 pound boneless skinless thighs or breasts (thinly sliced)

Salt and Pepper:

Garlic:

4 cloves (minced)

Ginger:

1 tablespoon (grated)

Soy Sauce:

2 tablespoons

Oyster Sauce:

1 tablespoon

Hoisin Sauce:

2 tablespoons

Honey:

2 tablespoons

Chili Garlic Sauce:

1–2 tablespoons

Rice Vinegar:

1 tablespoon

Chicken Broth:

½ cup low-sodium

Red Bell Pepper:

1 (thinly sliced)

Green Onions:

½ cup chopped

Fresh Basil Leaves:

1 cup (Thai basil preferred)

For Serving:

Toasted sesame seeds and lime wedges


Instructions

  1. Cook Noodles: Prepare noodles according to package instructions, drain, rinse, and set aside.
  2. Cook Chicken: Brown chicken in 1 tbsp sesame oil, then set aside.
  3. Sauté Aromatics: Cook garlic, ginger, and bell pepper in remaining oil.
  4. Make Sauce: Whisk together soy sauce, oyster sauce, hoisin sauce, honey, chili garlic sauce, rice vinegar, and broth.
  5. Combine: Add noodles, chicken, and sauce to the pan, toss to coat.
  6. Finish: Stir in green onions and basil before serving. Garnish with sesame seeds and lime wedges.

  • You can use tofu as a chicken substitute for a vegetarian version.
