Description

This Tater Tot Chicken Pot Pie is a comforting, hearty dish featuring a creamy chicken and vegetable filling topped with crispy, golden tater tots. It combines the classic flavors of a traditional chicken pot pie with the fun twist of a tater tot crust, perfect for a family-friendly dinner.

Ingredients

Scale

For the Filling:

  • 3 tbsp unsalted butter
  • 1 small or 1/2 large yellow onion, finely chopped
  • 2 medium carrots, peeled and finely chopped (about 1 cup)
  • 1 large stalk celery, finely chopped (about 1 cup)
  • 3 cloves garlic, finely chopped
  • 2 tsp fresh thyme leaves
  • Kosher salt and freshly ground black pepper, to taste
  • 3 tbsp all-purpose flour
  • 2 1/2 cups low-sodium chicken broth
  • 1/4 cup heavy cream
  • 3 cups shredded rotisserie chicken
  • 1 cup frozen peas

For the Topping:

  • 1 (32-oz) bag frozen tater tots

Instructions

  1. Preheat the oven: Preheat your oven to 375°F (190°C) to prepare for baking the pot pie.
  2. Melt butter and sauté vegetables: In a large skillet, melt the unsalted butter over medium heat. Add the finely chopped onion, carrots, celery, garlic, and fresh thyme leaves. Season with kosher salt and freshly ground black pepper. Cook for about 10 minutes, stirring occasionally, until the vegetables have softened.
  3. Add flour to thicken: Stir in the all-purpose flour and cook for another 2 minutes while whisking frequently to form a roux, which will help thicken the filling.
  4. Incorporate broth and cream: Gradually whisk in the low-sodium chicken broth, ensuring no lumps form. Bring the mixture to a boil, then reduce the heat to low and stir in the heavy cream to make the filling creamy.
  5. Simmer the filling: Let the mixture simmer gently for 5 minutes until it thickens slightly, stirring occasionally to prevent sticking.
  6. Add chicken and peas: Stir in the shredded rotisserie chicken and frozen peas. Continue to simmer for an additional 2 minutes to warm everything through. Taste and adjust seasoning with salt and pepper as needed.
  7. Prepare the topping: Remove the skillet from heat. Arrange the frozen tater tots in a circular pattern evenly over the chicken filling, covering the surface completely.
  8. Bake the pot pie: Place the skillet in the preheated oven and bake for 30 to 35 minutes until the tater tots are golden brown and the filling is bubbly around the edges.
  9. Broil for crispiness: Turn on the oven broiler and broil for 1 to 2 minutes, watching carefully, until the tater tots are extra crisp and deeply golden brown.
  10. Serve: Remove the skillet from the oven, slice into portions, and serve immediately while hot and delicious.

Notes

  • You can substitute leftover cooked chicken for rotisserie chicken if desired.
  • Feel free to add other vegetables like corn or mushrooms for extra flavor.
  • If you prefer a thicker filling, let it simmer a bit longer before adding the chicken and peas.
  • This dish is best served fresh but can be refrigerated and reheated the next day.
  • Use a cast-iron skillet or oven-safe pan to bake and broil directly.
