Ingredients
Scale
Chicken and Rice
- 2 cups cooked chicken breast, diced
- 1 cup uncooked jasmine rice
- 2 cups low-sodium chicken broth
Teriyaki Sauce
- 1 cup teriyaki sauce
- 1 tablespoon soy sauce
- 1 tablespoon honey
- 2 cloves garlic, minced
- 1 teaspoon fresh ginger, grated
- 1 tablespoon cornstarch
- 2 tablespoons water
- 1 tablespoon olive oil
Vegetables and Garnishes
- 1 cup broccoli florets
- 1 cup shredded carrots
- 1 red bell pepper, diced
- 2 green onions, sliced
- 1 tablespoon sesame seeds
Instructions
- Preheat and Prep dish: Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish to prevent sticking.
- Sauté aromatics: In a saucepan over medium heat, add the olive oil and sauté the minced garlic and grated ginger for about 1 minute until fragrant to build the base flavor for the sauce.
- Make sauce: Stir in the teriyaki sauce, soy sauce, honey, and chicken broth into the saucepan, bringing the mixture to a gentle simmer to meld flavors together.
- Thicken sauce: Mix the cornstarch and water in a small bowl to create a slurry, then stir it into the simmering sauce. Cook for 1 to 2 minutes until the sauce thickens slightly.
- Assemble casserole: Spread the uncooked jasmine rice evenly across the bottom of the prepared baking dish. Layer the diced chicken, broccoli florets, shredded carrots, and diced red bell pepper evenly over the rice.
- Add sauce and combine: Pour the thickened teriyaki sauce mixture evenly over all ingredients in the dish and gently stir to combine everything well.
- Bake: Cover the baking dish tightly with aluminum foil and bake in the preheated oven for 35 to 40 minutes, or until the rice is tender and the liquid is fully absorbed.
- Let rest and garnish: Remove from the oven and let the casserole rest for 5 minutes before removing the foil. Garnish with sliced green onions and sesame seeds before serving to add freshness and crunch.
Notes
- For a heartier casserole, substitute brown rice for jasmine rice, increase baking time by approximately 15 minutes, and add an extra 1/4 cup chicken broth to ensure rice cooks fully.
- You can use frozen mixed vegetables instead of fresh broccoli, carrots, and bell pepper for convenience—just add them directly to the dish.
- For a sweeter variation, try adding pineapple chunks to the casserole before baking for a tropical twist.
