Ingredients
Scale
For the Teriyaki Beef:
- 1 pound ground beef
- 2 tablespoons sesame oil (divided)
- 3 garlic cloves, minced
- 1 teaspoon fresh ginger, grated
- ½ cup low-sodium soy sauce
- ¼ cup brown sugar
- 2 tablespoons rice vinegar
- 2 tablespoons water
- 1 tablespoon cornstarch
For the Bowl:
- 3 cups broccoli florets
- 3 cups cooked white or brown rice
- 2 green onions, sliced
- 1 tablespoon sesame seeds (optional, for garnish)
Instructions
- Cook the Beef: In a large skillet, heat 1 tablespoon sesame oil over medium-high heat. Add ground beef and cook until browned, breaking it up with a spoon, about 6 to 8 minutes. Drain excess fat if needed.
- Sauté Aromatics: Push beef to one side of the skillet and add remaining sesame oil, garlic, and ginger, cooking for 1 minute until fragrant.
- Add Broccoli: Stir in broccoli florets and cook for 3 to 4 minutes until bright green and tender-crisp.
- Make the Sauce: In a small bowl, whisk soy sauce, brown sugar, rice vinegar, water, and cornstarch until smooth. Pour sauce into skillet and stir everything together, cooking for 2 to 3 minutes until sauce thickens and coats the beef and broccoli.
- Serve: Serve over bowls of warm rice, topped with green onions and sesame seeds.
Notes
- For extra heat, add a teaspoon of sriracha or red pepper flakes to the sauce.
- This recipe works well with ground turkey or chicken as a lighter option.
