For the meatballs:
- 1 lb ground chicken
- 2 tablespoons red curry paste
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 green onions, finely chopped
- 1/4 cup panko breadcrumbs
- 1 tablespoon fish sauce
- 1 egg
- 1/4 teaspoon salt
For the coconut curry sauce:
- 1 tablespoon coconut oil
- 1 small onion, finely chopped
- 1 tablespoon red curry paste
- 1 (13.5 oz) can full-fat coconut milk
- 1 tablespoon fish sauce
- 1 teaspoon brown sugar
- juice of 1/2 lime
- fresh basil or cilantro for garnish
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper. In a large bowl, mix all the meatball ingredients until just combined. Form into 1 1/2-inch meatballs and place on the prepared baking sheet. Bake for 15–18 minutes, or until golden and cooked through.
- While the meatballs are baking, heat coconut oil in a large skillet over medium heat. Add the chopped onion and sauté for 3–4 minutes until soft. Stir in red curry paste and cook for 1 minute to release the flavors. Pour in the coconut milk, fish sauce, and brown sugar. Bring to a gentle simmer and cook for 5–7 minutes until slightly thickened.
- Add the cooked meatballs to the sauce and simmer for another 5 minutes, allowing the flavors to meld. Stir in lime juice, taste, and adjust seasoning if needed. Garnish with fresh basil or cilantro and serve hot over jasmine rice or noodles.
Notes
- Adjust the level of curry paste for more or less heat.
- Ground turkey or pork can be used instead of chicken.
- Add sliced bell peppers or spinach to the sauce for extra veggies.
