Ingredients
Scale
Peach Filling
- 4 cups fresh or frozen peaches, sliced
- 1/2 cup granulated sugar
- 1 tbsp lemon juice
- 1 tbsp cornstarch
- 1/2 tsp ground cinnamon (optional)
Topping
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/2 cup unsalted butter, melted
- 1/2 cup milk
- 1 tsp vanilla extract
Instructions
- Preheat and prepare dish: Preheat your oven to 375°F (190°C) and grease a 9×9-inch baking dish to prevent sticking and ensure easy removal.
- Make the peach filling: In a large bowl, combine the sliced peaches, 1/2 cup sugar, lemon juice, cornstarch, and optional cinnamon. Stir thoroughly to coat the peaches evenly. Set aside to let the mixture thicken.
- Prepare the topping: In a separate bowl, whisk together flour, 1/2 cup sugar, baking powder, and salt. Add the melted butter, milk, and vanilla extract, stirring gently until just combined to create a soft batter.
- Assemble the cobbler: Pour the peach filling evenly into the greased baking dish. Drop spoonfuls of the topping over the peaches and carefully spread them out evenly to cover the fruit.
- Bake the cobbler: Place the dish in the preheated oven and bake for 35-40 minutes, or until the topping is golden brown and the peach filling is bubbling at the edges.
- Cool and serve: Allow the cobbler to cool for 10-15 minutes before serving. Enjoy warm, optionally topped with vanilla ice cream or whipped cream for added indulgence.
Notes
- For best results, use fresh ripe peaches in season or properly thaw frozen peaches and drain excess juice to avoid sogginess.
- If you prefer a less sweet dessert, reduce the sugar in the filling or topping accordingly.
- Ground cinnamon is optional but adds a nice warm flavor complementing the peaches.
- You can substitute milk with a non-dairy alternative to make it dairy-free, although this might slightly change texture.
- Leftover cobbler can be stored covered in the refrigerator for up to 3 days and reheated before serving.
