Start by cutting chicken breasts into small strips.

Coat the chicken with Salt and pepper, Oregano, and a small amount of Garlic powder.

Peel 2-3 cloves of garlic and smash or dice. Dice 1 red onion.

Slice 2-3 tomatoes into half-moon slices.

Sear the seasoned chicken pieces on one side, then flip and cook the other side until golden brown (3-5 mins). Set aside the cooked chicken.

Sauté garlic and oregano on low heat for a few minutes in the chicken drippings to release their flavors.

Add the chicken back into the skillet and throw in tomatoes.

Cook on low to medium heat for 3-5 minutes. The tomatoes will start to release juices that will make the chicken tender and flavorful.

Remove from heat and plate.

Sprinkle with fresh parsley and serve warm over rice or pasta.
