Description

These Ultimate Breakfast Burritos are a delicious morning meal that combines fluffy scrambled eggs, savory breakfast meats, crispy hash browns, and gooey cheese, all wrapped in a warm tortilla. Customize with your favorite toppings and make ahead for a convenient breakfast option.

Ingredients

Scale

Egg Mixture:

  • 6 large eggs
  • 1/4 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Fillings:

  • 1 tablespoon butter or oil
  • 1 cup cooked breakfast sausage or bacon (crumbled)
  • 1 cup shredded cheddar cheese
  • 1 cup frozen diced hash browns (cooked until golden)
  • 1/2 cup salsa or pico de gallo
  • 1/4 cup chopped green onions
  • 1 avocado (sliced)

Wrapping:

  • 4 large flour tortillas (burrito-size)
  • Optional: hot sauce, sour cream, or jalapeños for serving

Instructions

  1. Egg Mixture: In a medium bowl, whisk together eggs, milk, salt, and pepper.
  2. Scramble Eggs: Heat butter or oil in a large skillet over medium heat. Add egg mixture and scramble gently until just set.
  3. Prepare Tortillas: Warm tortillas in the microwave or on a dry skillet for 10–15 seconds to make them pliable.
  4. Assemble Burritos: Lay out each tortilla and layer scrambled eggs, cooked sausage or bacon, hash browns, shredded cheese, salsa, green onions, and avocado slices. Fold in the sides, then roll tightly into a burrito.
  5. Optional Toasting: If desired, place burritos seam-side down in a hot skillet to toast and seal, about 1–2 minutes per side.
  6. Serve: Serve immediately with optional toppings.

Notes

  • Customize with sautéed peppers, spinach, or black beans.
  • To make ahead, wrap tightly in foil and refrigerate for up to 3 days or freeze for up to 2 months.
  • Reheat in a skillet, microwave, or air fryer.
