Delicious and nutritious Vanilla Blueberry Protein Muffins that are perfect for a quick breakfast or snack. These muffins are moist, flavorful, and packed with protein.

Dry Ingredients:
- 1 1/2 cups all-purpose flour
- 1/2 cup vanilla protein powder
- 1/2 cup granulated sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
Wet Ingredients:
- 1/2 cup unsweetened applesauce
- 1/2 cup Greek yogurt
- 1/4 cup milk
- 1/4 cup vegetable oil
- 2 large eggs
- 1 tsp vanilla extract
Additional:
- 1 cup fresh or frozen blueberries (if using frozen, do not thaw)
Instructions
- Preheat Oven: Preheat oven to 350°F. Line a 12-cup muffin tin with paper liners or lightly grease with nonstick spray.
- Mix Dry Ingredients: In a large mixing bowl, whisk together flour, protein powder, sugar, baking powder, baking soda, and salt.
- Combine Wet Ingredients: In a separate bowl, whisk applesauce, Greek yogurt, milk, oil, eggs, and vanilla until smooth.
- Combine Batter: Pour wet ingredients into dry ingredients and stir gently until just combined. Fold in blueberries.
- Bake: Divide batter among muffin cups and bake for 18–22 minutes, or until a toothpick inserted comes out clean.
- Cool: Allow muffins to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
Notes
- For extra sweetness, sprinkle coarse sugar on top before baking.
- Muffins can be stored in an airtight container at room temperature for 3 days or frozen for up to 2 months.
