Ingredients

Chuck Roast:

3–4 pounds chuck roast

Seasoning:

2 tablespoons olive oil, 2 teaspoons kosher salt, 1 teaspoon black pepper, 1 teaspoon smoked paprika, 1 teaspoon cumin

Vegetables:

1 large onion sliced, 4 cloves garlic minced, 1 can (10 ounces) diced tomatoes with green chilies, 1 can (4 ounces) diced green chilies

Liquid and Flavorings:

1 packet taco seasoning or 2 tablespoons homemade seasoning, 1 cup beef broth, 1 tablespoon apple cider vinegar

Serving:

corn or flour tortillas for serving, toppings such as diced onion, cilantro, lime wedges, and shredded cheese


Instructions

  1. Preheat the Oven: Preheat oven to 300°F (150°C).
  2. Season and Sear the Roast: Season chuck roast with salt, pepper, smoked paprika, and cumin. Sear the roast on all sides in a Dutch oven over medium-high heat.
  3. Add Ingredients: Add onion and garlic, then stir in diced tomatoes, green chilies, taco seasoning, beef broth, and vinegar.
  4. Braise: Cover and braise in the oven for 3–4 hours until tender.
  5. Shred and Serve: Shred the meat, return to the sauce, and serve in tortillas with toppings.

Notes

  • For extra depth, consider adding a dried ancho chili or chipotle pepper to the braising liquid.
