Instructions
- Create Mint Simple Syrup: In a small saucepan, combine sugar and water over medium heat. Stir until sugar dissolves completely to make a simple syrup, about 2–3 minutes. Remove from heat and stir in chopped mint; let steep for 10 minutes. Strain to remove mint leaves and cool syrup completely.
- Blend Sorbet Mixture: In a blender, combine watermelon cubes, cooled mint syrup, and lime juice; blend until smooth.
- Freeze Sorbet: Pour mixture into a shallow dish and freeze for 3–4 hours, stirring with a fork every 30 minutes to break up ice crystals, until sorbet is firm and fluffy. Alternatively, churn in an ice cream maker according to manufacturer’s instructions.

- For a refined texture, strain blended watermelon through a fine-mesh sieve before freezing.
