- Heat Butter and Cream: In a saucepan over low heat, melt the butter along with the lemon zest. Then increase the heat to medium and add the heavy whipping cream. Heat until it just starts to simmer, then immediately remove from heat to avoid curdling.
- Combine Mixtures: Pour the hot cream and butter mixture over the white chocolate chips. Let it sit for a few seconds to soften the chocolate, then stir gently until the mixture is smooth and fully melted.
- Chill Mixture: Cover the bowl and refrigerate the mixture until firm, about 1 hour. This will make it easier to form into truffles.
- Form Truffles: Using a small scoop or spoon, portion out the firm mixture and roll it between your hands to form small balls. Use powdered sugar on your hands or the truffle if it feels sticky.
- Coat with Powdered Sugar: Roll each truffle evenly in the powdered sugar coating until fully covered.
- Final Chill: Place the coated truffles back into the refrigerator and let them chill for at least 30 minutes to set properly before serving.
